Cutting a sample of osmotically dehydrated meat is Xingchu Li, a food scientist with FPL Foods. As the largest integrated food processing company in the Southeast, FPL Foods is in tune with what the DoD is trying to develop. Li, from China, completed his doctorate in food science at Iowa State University.
